Cooking Class Menu

・Jushi
Jushi is Okinawan mixed rice with pork, Shiitake mushroom, carrot and broth made from pork and dried bonito shavings.
Jushi is from the pork-eating culture of Okinawa.

・Papaya Irichi
Papaya Irichi is sliced green papaya and carrot with canned tuna stir-fried.
We use a traditional slicer called Shiri-shiri-ki.

・Mozuku seaweed Tempura
Mozuku seaweed tempura is Mozuku seaweed(caught by me) , carrot and onion that have been covered in batter and fried.
Ingredients include flower and eggs for the batter.
We eat Mozuku seaweed for health in Japan.

・Aosa(sea lettuce) soup
Aosa is one of seaweed and very popular healthy food in Okinawa.
Ingredients include Aosa (caught by me), Tofu and broth made from dried bonito shavings.

・Agarasa
Agarasa is Okinawan traditional brown sugar steamed bread.
Ingredients include flour, eggs, honey, brown sugar and milk.
This is very simple Okinawan sweets and mild taste.

  • Tempura

    Tempura

    Tempura (天ぷら) is a classical Portuguese dish brought to and popularized by Japan, consisting of seafood or vegetables that have been battered and deep fried. Tempura is a typical home-style cooking in Japan. It is often referred to as a representative dish to Japan. Although there are various theories, it is said that Tokugawa Ieyasu, the general of the Edo period, liked tempura so much that he allegedly died from eating too much.

    Rice

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

Cooking Class Information

This cooking class looks hard because there are many dishes.
But don't worry! You can follow a process together with us!

We'll start by harvesting shell ginger leaves, used to wrap agarasa.

Step1. Cut the all ingredients.

Step2. Shiri-shiri(slice) papaya and carrot with Shiri-shiri-ki for papaya Irichi.

Step3. Put the ingredients for Jushi into a ricecooker.

Step4. Make agarasa.
-Mix flour, eggs and brown suger to make its batter.
-Put them into a mold and steam.

Step5. While these are cooking, let's stir-fry green papaya and carrot with tuna.

Step6. Cook mozuku seaweed Tempura.
-Mix flour, eggs and water to make its batter.
-Add Mozuku seaweed, sliced carrot and onion in them.
-Fry for 3 to 4 minutes.

Step7. Make aosa soup.

Step8. Dish up on a partition plate and dig in while these are hot!

And have some tea time(hibiscus tea) after eating!
