    Karaage

    Japanese fried chicken, karaage is made by marinating bite-size pieces of chicken in sake, soy sauce, ginger and garlic before coating them generously with potato starch. When fried, the starch turns into an ultra crispy shell encasing a flavorful juicy bite of chicken. Absolutely great with beer.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

  • Green Tea

    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

This classroom is divided into three courses (beginner, intermediate and advanced). In each class, you will first learn about Japanese dashi and seasonings (miso, soy sauce) while drinking a hojicha.

"Curry course" is completed using a curry roux that can be easily made, adding a secret taste. As a topping, fry tonkatsu. Freshly fried tonkatsu is very delicious. Garnish includes "Fukujinzuke pickles" and "Rakkyo".

The "Oshizushi" course creates two types of Oshizushi. If you have a square mold, you can just put the ingredients and push, so it is a simple sushi that does not require any techniques or tools like seaweed rolls and nigiri sushi. It looks great, so it's great to have a party. "Fried chicken" is made as a meat dish. By using soy sauce, garlic, and ginger for the flavor, it becomes a deep-fried Japanese style unlike fried chicken.

The "roasted sushi" course mainly makes meat sushi using Japanese black beef. In a sushi restaurant, you hold them one by one. In this case, the size and the grip are even, so it looks beautiful. In addition, we make Omelet using square frying pan.

"Vegetable sushi" course makes 7 kinds of vegetable sushi using avocado, eggplant, lotus root, thick fried etc. Because it is seasoned, you can easily do it just by putting it on sushi rice. Sushi courses include miso soup (daily) and tofu tasting, and all courses include dessert and matcha drink.

Hello, my name is Chinatsu.
I have been cooking home cooking in Yokohama for more than 20 years while attending Japanese cooking classes.
I love eating and I'm good at reproducing what I enjoyed eating out at home.
My hobby is to drive myself and travel, especially traveling alone at shrines and temples.
I started this classroom by telling foreign tourists the heart of Japanese "wa" through home cooking, and thinking that if I could see a different culture from the tourists, my world would expand.
I decided to.
Classrooms are located in suburban residential areas, 25 minutes from Yokohama and 10 minutes from Shin-Yokohama. Nearby, there are Japanese folk house park and parks that make use of nature, so you can avoid crowded sightseeing spots and enjoy daily life in Japan.
There are super cheap supermarkets in front of the station, so you can buy cheap Japanese foods, sweets and instant noodles on the way back.
Please come to Yokohama to enjoy a relaxing time!
