Tendon (Locally grown organic Japanese rice with seasonal veggie tempura. Includes 5-6 seasonal veggies), Tsukemono (traditional seasonal pickles) . Home made Miso soup, Kimpira (Uniquely Japanese stir fried veggie dish seasoned with Mirin, soy sauce and sesame oil), Goma-ae (seasonal veggies with ground sesame seeds and...).

    Tempura

    Tempura (天ぷら) is a classical Portuguese dish brought to and popularized by Japan, consisting of seafood or vegetables that have been battered and deep fried. Tempura is a typical home-style cooking in Japan. It is often referred to as a representative dish to Japan. Although there are various theories, it is said that Tokugawa Ieyasu, the general of the Edo period, liked tempura so much that he allegedly died from eating too much.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

    Tsukemono

    Japanese preserved vegetables, usually pickled in a salt, brine or a bed of rice bran. They are often served to satisfy the balance with other dishes in sensory, authentic and nutritious consideration. Tsukemono are raw vegetables and think of them as a type of salad with the added benefits of lactic-acid fermentation.

Cooking Class Information

My cooking classes are 100% vegan. I also specialize in Japanese cooking with simple easy to find ingredients you can get in your country. I will show you simple dishes and how to bring out the flavors in the vegetables. ( I use only the freshest and most local ingredients I can get.. organic also when possible )
I never use white sugar, chemical seasonings, GMO, chemical dish washing soap or any products that are toxic, bad for humans, animals or the environment. If you have any specific food allergies please let me know. I will try to find substitutes that suit your needs. If you have enough time, we will also include shopping in local market or natural gardens to get the ingredients together that we will use for the cooking class.
