We will use Tofu for all dishes in different ways. There are many variety of tofu products in Japan. Each has a suitable way of cooking to make them more divine.
This is not only for the Tofu lovers but also for every heath-conscious eaters.

The menu

1;Fried tofu sweet soy sauce based stir fry
Fried tofu is a perfect for stir fry. We will make a delicious savory sauce to got with fried tofu. It's very rich and flavorful unlike the image of Tofu.

2;Three kinds of silky tofu salad
Japanese love to eat silky tofu as salad along with favorite dressing. I'll introduce you quick and easy dressings which will be available in your countries.

3;Spinach with creamy tofu dressing
This creamy tofu dressing is Japanese delicacy I believe. My grandma taught me 20years ago, since then this dish has been one of my staple dish. It's creamy, sweet, and nutty. Enjoy the magic of tofu!

4;Miso Soup
We will make a soup stock from the scratch. Moreover, You will get to pick your favorite miso from several kinds of miso such as red miso, yellow miso as I explain you each character.
I'm so into miso. Love to share the knowledge with you to get miso a little familiar to you!

    Rice

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

We will meet at the Musashikoyama station. On the way to our house, you will get to enjoy the many local stores in the longest arcade in Tokyo. There are so many cultural and convenient stuff lined up. After we reach our house, You will be guided by host teacher for how to make Japanese food. You will be surprised how easy it is to cook Japanese cuisine!
In addition, you will learn some Japanese food culture (e.g. Miso tasting).
After Cooking, we will taste our masterpiece all together on beautifully set table. During tasting, we share the culture, lifestyle, recommendable places in Japan, and so on. This class is not only for the cooking lovers but also for someone who wants to experience short time home stay in Japanese local house. It is very homey and cozy.

At Cambridge, she started a Japanese cooking class at home for local.
