Gnocchi : they are simple balls basically of potatoes and flour, cooked in boiling water and served with a tomatoes sauce. A very italian and popular food. Everybody loves it!
In this cooking class we beging with the already cooked potatoes . We peel them and then pass them through a ricer or mash them using a fork.
we flour a work surface, add the salt the egg and mix all together with the mashed patatoes. We knead gently till some flour is incorporeted.Then we roll a piece of dough into a rope about 3 cm. diameter. With a knife we cut the rope and make the gnocchi 3/4 cm long.
I'll follow to teach how long we must knead, how much flour is used( and why..!) and how to give the tipical form to the gnocchi.
