Adobo is the Philippines' most famous dish. Chicken and/or pork stewed in a salty sour sauce. My version will be marinated overnight in red wine, and panseared to perfection. This will be served with caramelized onions and diced potatoes.
Lumpia is the Filipino version of the ubiquitous spring roll. A mixture of ground pork and flavorful vegetables is wrapped in rice paper and deep fried to perfection. A sweet and sour dipping sauce is served on the side for an explosion of flavors in your mouth.
Pandesal is the Filipino breakfast bread. These are pillowy soft and airy rolls best enjoyed with your morning cup of coffee.
We start this cooking class with an introductory chitchat to get to know each other. We want you to feel comfortable with us on the online platform. We strive to create the atmosphere of sharing one kitchen all together.
I will be cooking with my love and sous chef Michelle. She is Filipina, and she introduced me to the wonderful flavors of the Philippines. She is a lawyer and also a chef in training.
We will begin with preparing the adobo. Every household has their own version of the adobo. I will share with you ours, starting with my secret marinade. If you come to the Philippines, or have Filipino friends, this is the first dish any Filipino family will prepare for you. It is hearty, easy to make and the longer it stores, the better it tastes.
We will then prepare the filling of the lumpia. Lumpia is a celebration food in the Philippines. In every party, fiesta, there will be lumpia for sure. I will teach you how to roll properly to keep the lumpia sealed and the best tips to make it the crispiest, juiciest spring roll you've ever had in your life.
Finally, we will make bread. The pandesal is a basic bread but it warms the heart. You can eat it at any time of the day. Filipinos love this! I will teach you how to knead dough, and how to properly roll and shape it as well. We will have a lot of fun!
Together with the traditional method of cooking these dishes, I will infuse the French flair with neat tips and tricks that will definitely impress your family and friends!

Bonjour, we are Sébastien and Michelle. Sébastien is a professional chef from West of France. Michelle is a lawyer and chef from the Philippines.
Sébastien's earliest childhood memories was having a knife in hand and cutting stuff in the kitchen. At a young age and straight out of culinary and pastry school, he travelled and trained with the world's best in the kitchens of Michelin starred restaurants, DANIEL by Daniel Boulud, New York and La Belle Epoque in Versailles with Alain Raye.
It is in New York City that he built his career around the most important French restaurants for over 20 years. From iconic La Goulue in midtown Manhattan, to his own Le Comptoir in Brooklyn and executive chef in Bagatelle at the Meatpacking District.
We are now well settled in the tropical islands of the Philippines, exploring the exotic flavors here. If we're not playing in the beach with our three dogs, Biscotte, Pastis and Panda, we run a seaside French restaurant, Mr. C, here in the island of Puerto Galera.
