Biriyani is a very popular, multi layered meat, rice and vegetable dish. It could be vegetarian or non vegetarian and is a traditional one pot meal served for special occasions like weddings. It is an elaborate dish that involves a bit of preparation and there are hundreds of different versions of this dish. I love making this dish because my family and friends love it and so will you. This dish is served with a delicious yoghurt salad which is very easy to make and will included in the class.
Cook Biriyani With Ruth Online features the Mangalorean style of Indian food. These are traditional recipes that I grew up with and are very different to some of the usual concept of Indian food. Mangalore is a beautiful coastal city in South India between the waters of the Arabian Sea and the Western Ghats Mountain Range. It is a port that has been influenced by the Arabs, Portuguese and Germans who settled there. In fact Vasco da Gama landed there in 1498 and took over the Spice trade until the British overthrew the Portuguese in the late 18th century. And so we are blessed with a variety of cuisines.
I start with an introduction to Indian Food and culture. Then talk about Mangalorean food and my childhood days in Mangalore.
The online experience is about 2 hours. The duration of the class depends on the dish selected. An online presentation showing the recipe with ingredients and cultural associations will be shown after which we will begin the class. Feel free to ask questions after the class. The pdf file will be sent to you after the class so you can make the recipe again and again.
