Appetizer:
Flammkuchen with Frankford Green Sauce
- a baked flatbread with onions (with or without bacon), and sour cream. This recipe is originally from the South and typically served in restaurants as an appetizer and light meal in the summer.

Frankford Green Sauce is a pesto like dip, that's made with at least seven herbs. This comes originally from the state Hesse and is a refreshing side dish, topping or spread of breads.

main dish:
Vegan/vegetarian Maultaschen (German style Ravioli)

dessert: Cold Dog Cake
This is a cold baked cake consisting of flat butter cookies surrounded by a chocolate, coconut mixture. Delicious to coffee or tea in the afternoon or as dessert.

Cooking Class Information

In this cooking class, you'll cook in a small team modern German food, with vegetarian and vegan versions, using fresh, local, organic and seasonal vegetables. Kit will explain a lot about good produce, the rationality and seasonality of Germany's cuisine and about herbs and their health benefits.

Compared to other cooking classes, this experience is very personalized and much about exploring culinary culture, hands on and in conversation. Creating the menu is a team oriented creative process and lets you gain a deeper appreciation of Modern Germany's food culture, in particular how different it is from what typically comes to mind when we think of German food.

Let's wander through the vibrant farmers market to gather the season's finest ingredients for a regional feast, discovering the seasons of local food culture and sustainable farming along the way. Then we will explore the neighborhood's hidden gems—artisan chocolate shops, intimate wine boutiques, and bakeries where the scent of fresh-baked bread spills onto cobblestone streets.

Did you know, that Germans eat lots of vegetables, and that Berlin is still the Vegan capital of the world? Yes, even though we eat lots of meat too, the immense variety of vegetables and fruits in German cuisine, often very seasonal and regional is most wonderful and delicious to discover. Even though mushrooms are not a vegetable per se, but beloved when the seasons come around!

When we are done shopping at the market, we will explore the neighborhood and shop for absolutely amazing bread, fine German wine and sparkling wine and cheeses!

Once we are at my apartment in a most gorgeous +120 year old building in a hip neighborhood in Berlin, we will admire our finds and start cooking the 4-course menu.

5. Herbs, herbs, herbs

I'm a big fan of herbs. In spring and summer, Germans make a sauce called Frankfurt green Sauce. It consist of at least 7 herbs and is finely balance with a dash of mustard, lemon and cream. Absolutely delicious!

While we cook, we exchange about each other's food culture, prompting meaningful conversations, that lead to new acquaintances or even friendships, and leave a sense of true connection and exchange.

And last, but not least, we will enjoy our home-cooked meal with fine German wine (yes, beyond Rieslings). And if you don't drink alcohol, no problem, just let me know, and I'll make up for it with a refreshing local beverage or home-made herbal spritzer.
