1) “bittersweet salad”
This salad has got looks and flavor.
Peel and thinly slice 2 apples and 2 fennels horizontally. Put in a bowl and squeeze over the juice of 1 lemon to prevent them getting dark. Boil 200g. of beans, wait until cold and add to the other ingredients.
Add olive oil, sea salt and freshly milled black pepper. Gently toss with your hands and serve straightaway.

2) Tagliolini (homemade pasta ) seasoned with Pesto Sauce
Ingredients:
500g. pasta flour ( durum wheat flour)
5 large organic eggs
1tbsp. olive oil
1 tsp fine salt
“Simple ingredients and a little bit of love is all you need to make your own pasta dough”.
Tip the flour on a surface and make a well. Crack the eggs into it . Beat the eggs until smooth.
Using the tips of your fingers, mix the eggs with the flour, incorporating a little at a time, until everything is combined.
Knead the pieces of dough together until they all bind together to give you one big lump of dough. To knead the dough, push it away from you with the heel of your hand, then roll it back on itself towards you to fold it in a half, and push it away again. The dough is needed to stretch the gluten so the pasta will be light and silky. Stop kneading when the dough is smooth and matt. Form into a ball, wrap in cling film, and let it relax in the fridge for at least 30 min.. Don’t skip this stage or the dough will be too springy to roll.
Remove from the fridge and roll it out ( either with a rolling-pin or a machine), you need to shape or cut it straight away as pasta dries up very quickly.

3) Pesto sauce
Fresh basil leaves weighing about 70g. 60g. Pine nuts 2 garlic cloves finely chopped 50g fresh parmigiano cheese, grated 250 ml extra virgin olive oil sea salt and freshly milled black pepper
Pulse the basil leaves with the garlic, parmigiano, pine nuts, and seasoning in the blender a few times, then pulse in the oil. Don't grind the pesto to a puree' , but stop pulsing while it's still chunky.
