PICO DE GALLO
Tomato base dip-the foundation of a perfect guacamole. Ingredients are:
3 pcs diced tomatoes
1/4 diced red onions
3 spoons of freshly chopped coriander
3 pcs lime
1 pcs green chillies chopped
Salt and pepper
GUACAMOLE
Avocado dip-the thing that all Mexicans love to add in anything. Ingredients are:
2 Medium Avocado
*The rest of the ingredients will come from Pico de Gallo!
TORTILLAS
The Corazón(heart) of all Mexicans- 100% gluten free ;) Ingredients are:
1 Cup of Corn Flour (ask me for references)
170ML Cold Water
20 ML Oil (can be Corn or sunflower oil)
Salt
TACOS BAJA
White fish fried in tempura batter-very popular in the north. Ingredients are:
300GR White Fish (can be barramundi, nilo, white snapper, seabass, mahi mahi)
200GR Self raising flour
1 can of beer
400ML oil
Mayonaise
1 can of chipotle
Dry oregano
Salt & pepper

In this cooking class, you will learn how to prepare the world famous Tacos Baja. Originating in the North of Mexico, there are a variety of versions to prepare it and this recipe is my version.
We will begin with preparing the salsas pico de gallo by chopping tomatoes and onions which will be the base for our guacamole. Then we will smash avocados and combine half the pico de gallo to turn it into guacamole followed by making corn tortillas from scratch! Finally, we'll prep the batter for our fish and fry them to perfection.
The outcome is a delicious baja fish tacos worth sharing with your friends and family!
The classes are available Wednesdays to Fridays at 11am or 7pm (GMT +8) via Zoom and will take about 1 hour 45 minutes. This is best enjoyed in a group of 2 to 4 people and I would highly recommend getting nacho chips on the side to accompany your tasty salsas and to snack in between!
