In my opinion udon captures the essence of Japanese culture: delicate and balanced, yet simple and sturdy. Make fresh noodles from scratch, dashi, and a seasonal udon dish as part of this course.
Udon is often over shadowed by ramen outside of Japan, but not in the Kansai region, where I spent time training. Udon is a thick wheat noodle usually served in a light but umami filled broth. There are many regional varieties of udon, and different ways to eat the noodles. It's essentially a very simple process to make, and a very clean flavoured but filling dish.

Hi! My name is Joe Kimura. I started Kimura's Kitchen as a Japanese Cooking School in 2015. In my online cooking school, you can learn to make amazing sushi, ramen, tempura, udon, okonomiyaki and much more, directly from a talented chef who's worked with many of the big names in the food industry, and with 18 years experience. My Cooking Classes are all held Online, and are available anywhere in the world. All you need is a kitchen and an internet connection! The duration of my classes are approximately 90 minutes.
