Cooking Class Information

① “Sashimi” - Using fresh fish of the day.

Sashimi, a unique Japanese tradition of consuming raw fish since the Edo period. The fish is soaked in salted koji overnight, then sliced into thick strips to preserve its freshness, minimizing contact with the knife. Learn the art of slicing and presentation techniques.

② “Oshinko” - Using vegetables from Okinawa Prefecture.

Oshinko, not only served as a side dish but also as a palate cleanser or tea accompaniment. Its name originates from its characteristic of being lightly pickled, fresh, and fragrant, meaning “new aroma.” Enjoy the natural flavors and aromas of the vegetables.

③ “Sumashi-jiru” - Using Okinawa Prefecture-grown mozuku seaweed.

A clear broth made from bonito dashi seasoned with sake, salt, light soy sauce, etc., allowing you to savor the deliciousness of bonito and kombu dashi. Enjoy a bowl of clear soup with fresh Okinawa-grown mozuku seaweed. Learn the art of making dashi from scratch.

④ “Moochi” - Using purple sweet potatoes and black sugar.

“Moochi” means “mochi” in Okinawan dialect. It’s made by kneading mochiko (rice flour), seasoning it with black sugar or purple sweet potatoes, then wrapping it in leaves of the moon peach plant (traditionally believed to ward off evil spirits and known for its antimicrobial properties) and steaming it. It’s eaten on December 8th of the lunar calendar as a symbol of health and longevity.

①『お刺身(おさしみ)』ーその日の新鮮な魚使用

日本の江戸時代から鮮魚を生食する習慣がある日本ならではの刺身。塩麹に一晩浸けた魚の柵を、刺身切りし、整えて盛りつける。
魚の鮮度を損なわないよう、柵に包丁があたる面をなるべく少なくして厚みのある短冊に切ていく。その切りつけや盛りつけ方のポイントを学べます。

②『お新香(おしんこう)』-沖縄県産野菜使用

日本ではご飯のおともだけでなく、箸休めやお茶うけとしてもよく用いられ、漬かりが浅く新鮮で野菜の香りがするという特徴が名前の由来となり、「新しい香(こう)のもの」ということから、お新香と呼ばれるようになりました。
野菜本来の味わいや香りを楽しめます。

③『澄まし汁』-沖縄県産もずく使用

鰹の一番だしを酒、塩、うす口醤油などで調味した「澄んだ汁」の総称で、鰹や昆布のだしの美味しさを味わえます。漁師が収穫した新鮮な沖縄県産もずくの澄まし汁をいただきます。
出汁の取り方を一から学べます。

④『ムーチー』-紅芋、黒糖使用

ムーチーは、「餅」を意味する沖縄方言であり、餅粉をこね、黒糖や紅芋などで味付けを行い月桃の葉(沖縄では古くから邪気を払う薬草とされ、また防菌作用があるので、食べ物を包むのにも使われてきた)で巻き、蒸して作る。旧暦の12月8日に、健康・長寿の祈願のため縁起物として食されました。
