Miso soup with pork, mushrooms, root vegetables, and pork. It is a miso soup packed with umami, which has been carefully extracted from the dashi stock. You will be warmed by the taste of Japan. White rice goes well with miso soup. In addition, we purchase stir-fried meat and vegetables, grilled fish, etc., and match them according to the season. If there is something you would like to eat, please feel free to ask. You can make Chinese and Western dishes such as boiled dumplings, mapo tofu, and Japanese-style curry rice.

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

Japanese food, especially in the Kansai region, where we are from, is called dashi culture, and it is important to bring out the umami in cooking using dashi as a base. When making miso soup, the first step is to collect the dashi stock. Then fry the ingredients. Add the miso soup after adding it to the dashi stock. This is how miso soup is completed. If you have the basic dashi stock, you can use it in many other Japanese dishes besides miso soup, such as simmered dishes and dipping.
