Oden is a type of simmered dish in Japanese cuisine. It is also classified as a hot pot dish. The soup is seasoned with dried bonito flakes and kombu seaweed, and various ingredients called seeds are added and simmered for a long time. Oden seeds include satsumaage, hanpen, grilled chikuwa, fish cake, konnyaku, radish, potato, ganmodoki, beef tendon, boiled egg, and fried tofu.

Since my son was a junior high school student, I taught international students how to cook as a host family, and in 2007 I started holding cooking classes at my home.

The international students who came to our home,
Since I started giving priority to Japanese-style dashi, which is the basics of Kyoto cuisine, I have been teaching lessons based on cooking using dashi.

I would like everyone to learn about Japanese home cooking and the wonderful culture of Japan.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

Cold sake in the summer. It goes well with hot sake in winter.

I was born and grew up in Kyoto.
I would like you to taste the taste of vegetables and rice which are harvested in this place.

I believe that Japanese food should be casual and daily food. So I want to cook with the japanese dish whichi is focused on the taste od the material itself, harvested for local cconsumption and healthy for your body.
