In this class we will cook:
・Rice balls (Onigiri)
・Miso soup
・A traditional fish dish with sauce

Rice ball(Onigiri):
Rice ball is one of the simplest and most convenient Japanese traditional foods. Common and traditional rice ball fillings include pickled plums, dried bonito flakes, and salted kelp.

Miso soup:
Miso soup is generally made with tofu (bean curd) and wakame (kelp) in a broth made from konbu (dried kelp) or dried katsuobushi (bonito flakes) mixed with miso (soybean paste). Miso is one of the most popular fermented foods.

Fish with ankake sauce:
Fish is a very common staple of Japanese food and may contribute to the longevity and health of Japanese people. Fish dishes often use koji, an ancient Japanese fermented food.

    Onigiri

    Onigiri is a Japanese comfort food made from steamed rice formed into the typical triangular, ball, or cylinder shapes and usually wrapped with nori(dried seaweed). Stuffed with a a variety of fillings and flavors, these rice balls make an ideal quick snack and are a fun alternative to sandwitches for lunch.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

For this class, we go shopping together at a local fish store or greengrocer to buy ingredients.

Next, we return to the kitchen to cook rice and prepare ingredients. When the rice is ready, use your hands to add the ingredients and make onigiri!

For miso soup, we will make soup stock using kelp and bonito flakes. We will add other ingredients and miso to make miso soup.

Lastly, we will fry and grill our fish using rice flour. Vegetable ingredients are sautéed, and kudzu is used to make sauce. we pour the sauce over the fish for a delicious combination.

Contents of dishes are the healthy home cooking with fish, Buddhist cuisine, medicinal cooking that they learned in Kyoto. If you are interested, I guide you for local fishes and vegetables market.

I like to be in contact with different cultures, so I'd like to talk with people from various countries.

My home is in Sumiyoshi-ku, where is convenience to transportation of the Osaka metro is good. As part of my cooking class, I can also guide you for Abiko Kannon, Nagai Botanical Garden, Sumiyoshi taisha.
