Grilled Atsuage, deep fried tofu with miso paste dip in it.

・Cooked vegetable with sesami paste
Steamed or boiled seasonal vegetables with sesame paste and ground sesame.

・Homemde Nukazuke pickles
Nukazuke is one of traditional Japanese pickles which is a rich source of lactic acid bacteria.

・Miso soup
Miso soup made with originally blended miso.

・Brown rice cooked in a rice pot or sushi rolls
Brown rice cooked in a traditional rice pot, or modern style sushi rolls.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Those are basically based on typical Japanese food, but some are in a bit of modern style.
You can also learn about Japanese fermentation food culture such as miso and pickles while cooking if you want.

I’ve learned about Japanese fermentation culture and hold home-party or event to enjoy fermented food such as miso with modern arrangements with organic wine&sake.
I sometimes teach miso or koji seasonings making, so I also can arrange those classes.
I always join cooking class to learn other food culture when I travel abroad, which makes me cultivate my interest :)
My motto is to have a good time together through sharing the table.
