Okra
Okra whole in 3 minutes in boilled water. Not boiling - pot off heat. Till soft. Slice Okra in to pretty big bits. Get chicken. Stock cube ready. Fry butter - 2 teaspoons. Add a big splash of Soy sauce. Add crumble stock cube. Add a little pepper. Mix. Then add Okra and mix. Fry for a few minutes.
Pumpkin curry
Pumpkin - cut to same size pieces. Take off skin. Add unroasted curry powder - half a teaspoon. Turmeric - half a teaspoon. And fenugreek - just a little/half a teaspoon. And garlic - 2 cloves - peeled and sliced.
Add 8 curry leaves and rip in to pieces - if dried and strong use a little. Add a bit of pandan leaves - ripped (maybe find in Indian or Thai shops). And a piece of cinnamon stick. 2 green chillies in big pieces with the seed. Add less than half an onion - sliced. Add 20ml coconut milk. Add a little salt. And water to cover over half.
Cook for 7-8 mins in medium heat. Don't open before boiling. When boiling the can open lid and mix. When pieces soft add more coconut milk and two big teaspoons of brown sugar. After adding milk second time - no more lid.
Prawn curry
Add prawns - 32 prawns (8 per person). Add roasted curry powder - 3 teaspoons. Add pepper - half a spoon. Add turmeric - half a teaspoon. Add a quarter of slicdd onion. A garlic clove chopped. Add curry leaves - 8 ripped. Add salt - two teaspoons. Crush 4 cardamon pods and 4 cloves and add. Add a tomato peeled. Add a little vinegar (coconut or apple cider) - half a cap. Add water to halfway. Add pandan leaves - about half ripped. Boil on the hob - wait until it is boiling before you remove lid. When boiling mix. Add salt to taste. Add milk after cooking for a while.
Make tomato roses. Peel tomato like a satsuma with a knife - thinly. Then roll up to look like flower.
Dhal.
Use red lentils. Was lentils at least 3 times. Maybe 4 times. Add exactly the same ingredients as pumpkin curry. Boil and only take lid off when boiling. When boiling mix it. Taste if needs more salt. Add a little coconut milk. Once finished add roasted curry powder to the top.
Potato salad
Boil potatoes in turmeric and salt till soft.
Thinly slice 1 and a half onions. Add coconut oil (3 tablespoons) and when sizzling on hob add garlic, 2 teaspoons mustard seeds and curry leaves. Add onion. Add salt and half a teaspoon turmeric. Fry. Add potatoes and add 2 teaspoons of chilli flakes (sweet tasting).
Can add turmeric to rice (half a teaspoon). And curry leaves with stem.
Carrots
Add unroasted curry powder to juliened carrots - about a teaspoon. And salt - 2/3 teaspoons. Mix with fingers. Leave to side.
Add coconut oil to pan on hob. When sizzling then add big pinch of cumin seeds. Rip and add some curry leaves. Add lid. When soft add a little coconut milk and a teaspoon roasted curry powder. Add salt to taste. Leave lid off and keep cooking - don't want too soft. Let cool with lid on. Add a squeeze of lime.
