Fotini and her husband, Christo, will welcome you with a refreshing drink and share the brief history of the Greek cuisine, which is the oldest in the Western world and the basis for all Western cuisines. She will also share more about the ingredients used in ancient Greece, their evolution in Byzantine times and the ones used in modern Greece. Later join Fotini and Christo, in their kitchen for a cooking class in Athens - this is not a formal cooking class, but one that feels like you're cooking with friends, that happen to be locals, in their home kitchen. You will learn to cook simple, authentic Greek recipes in your 1.5 hour class, Greek recipes that are not easily found in restaurants and that are healthy and easy to make.
A few dishes that are from the islands will be cooked by Christos and a few by Fotini. Some dishes, in particular sweets, may be half or totally prepared in advance since Greek sweets take a long time to prepare. Your class will be a mix of a demonstration and a hands-on experience. First, you will help Fotini and Christos chop all the ingredients and then they will show you how the dishes are prepared. They will show you how to make traditional Greek dishes like chicken pastitsada (a traditional recipe of Christo's island of origin Corfu), trachanas (cracked wheat soup), soutzoukakia (Greek baked meatballs in a tomato sauce) and maidanosalata (parsley spread). Please note that the menu varies depending on the season, as Fotini and Christo pay particular attention on the quality and freshness of the ingredients, vegetables are bought from the local market and meat and poultry from the butcher. You will also enjoy top quality Greek olive oil since Fotini is in the Greek national team of olive oil connoisseurs.
