・Colorful Oshizushi (pressed sushi)
Oshizushi is a type of sushi, and kakinoha sushi is famous in Nara. In my class, we easily make colorful oshizushi using fresh vegetables as well as shime saba (mackerel) and salmon.
・Osuimono (Somen-noodle soup)
Miwa somen is famous in Nara. The soup made with somen noodles is served warm in winter and cold in summer.
・Kinako pudding (soybean flour sweets)
People in Nara love soybean flour. This pudding with soybean flour and brown sugar is my original recipe.
First, everyone will introduce themselves, and then I will explain about three typical local dishes of Nara. Then, after a brief explanation of the cooking procedures, we will begin the cooking experience in the clean island kitchen. First, we will make ichiban dashi using kombu (kelp) and dried bonito flakes. The soup made with this ichiban dashi is very tasty. Kinako (soybean flour) pudding for dessert is very popular, but it only takes 10 minutes to make and the rest is a simple procedure of cooling in the refrigerator. Oshizushi is made using a wooden frame given to me by my mother, so anyone can make it beautifully. The ingredients are prepared and ready to work with, and when the three dishes are ready, it's tasting time. We enjoy eating in a Japanese-style room with an alcove. The Japanese tableware and lacquerware used for the dishes are also traditional Japanese items, so please enjoy them.
