    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

In this lesson, we’ll try to make Miso ramen with plenty of vegetables.
Miso is one of the representative seasonings in Japan and there are many types.
I'll teach you the recommended mixture and how to make a flavorful ramen soup.

Gyoza is a dish where fillings are wrapped in a dough made from wheat flour.
Gyoza can be cooked in various ways, such as pan-frying, boiling, or steaming, we’ll make pan-fried gyoza in this lesson.
You can learn how to make the filling, wrap, and cook it so that it becomes crispy.
I'll teach you the tips to make them delicious, and easy to remake them at your home whenever you crave it.

My lessons are not only about watching demonstrations but also putting them into practice as I want to give you enough information to help you cook them again when you return home.
Moreover, I can suggest which ingredients are better to use instead of Japanese ones since I struggled to get them while living abroad.
After finishing the cooking class, you will get a recipe PDF file or paper.

Hello, I’m Chinatsu.
Based in Nagoya, I run a cooking class where I share Japanese—especially Nagoya’s—food culture with people from around the world.
For more than 10 years, I lived abroad accompanying my husband on his overseas assignments. At first, I often felt lost because of the language and cultural differences. What supported me most were local cooking classes. The joy of cooking with unfamiliar ingredients and seasonings, interacting with local people, and shopping at local markets made me feel more connected to each country and added so much color to my life.
These experiences have become a precious treasure for me, and even today I sometimes recreate those dishes with fond memories of my days overseas.
In my class, you can experience Japanese food culture through dishes unique to Nagoya. Whether you are visiting Japan or living here, I hope you will discover a deeper connection to Japan through cooking. And when you share the dishes you learn here with your family and friends, it will become the best souvenir of all.
