★Premium Teriyaki Chicken
Teriyaki chicken is a classic Japanese home-style dish.
It is known for its sweet and savory flavor and shiny glaze.

The sauce is made with soy sauce, sake, and mirin.
Soy sauce gives a rich, salty taste.
Sake adds depth and removes any strong meat smell.
Mirin gives gentle sweetness and a glossy finish.

In Japanese, “teriyaki” means shiny and grilled or cooked.
This balance of sweet and salty flavors is very typical of Japanese cuisine.

★Basic Dashi stock
Dashi is the basis of Japanese cuisine.
The taste of Japanese food is determined by whether or not this dashi can be made deliciously.

We will make authentic dashi together using kombu (kelp) and dried bonito flakes.

★Miso-soup
Once you have made a good dashi broth, use it to make miso soup.
Miso soup is atypical home-style Japanese dish that can be eaten in every home.
Here, too, we use Nagoya's famous red miso.

★Japanese Rolled Omelet
Omelette is also a very famous dish in Japan.
It is made in a special square frying pan.
It is a little difficult to roll them nicely, but let's try it with the instructor!

★Namasu
Namasu is a Japanese salad of thinly sliced daikon radish and cattots lightly pickled in sweet vinegar.

★Onigiri Rice balls
We will make onigiri (rice balls), a favorite of both children and the elderly.
Onigiri can be made with a variety of ingredients such as salmon flakes, kelp, tuna, etc.
We will also teach you how to make beautiful triangles!

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

Come and savor the deep Umami created by fermentation using Aichi’s proud traditions of Soy sauce, Mirin and Sake.★

Aichi prefecture is known as one of Japan’s leading areas for traditional seasonings, including soy sauce, mirin, sake, vinegar and miso. In this hands-on lesson, you will discover how traditional fermentation transforms simple ingredients into a rich, complex flavor.

You will use premium local seasonings–artisan soy sauce, authentic brewed mirin and local sake–to create the ultimate Teriyaki Chicken. We will share our golden ratio of Teriyaki sauce, along with secret tips for making perfectly crispy and juicy Teriyaki Chicken.

To complete the meal, we will also prepare traditional side dishes; Miso soup made with Aichi’s famous red miso, a refreshing side dish using local vinegar, and Dashimaki Tamago (rolled omelet) seasoned with white dashi. After the cooking session, sit down and savor the delicious meal you’ve created!

The lesson is beginner-friendly and suitable for all skill levels. This experience is perfect for travelers who want to enjoy Japanese home cuisine and take home practical cooking skills to share with your family and friends! We look forward to cooking with you!
