Tiramisu is a classic Italian dessert made with layers of coffee-soaked ladyfingers and mascarpone cream, topped with cocoa powder. We’ll make it the traditional way, explaining each ingredient’s role and the history behind this iconic dish.

In this cooking class, we will prepare three iconic Italian dishes together—fresh pasta, stuffed ravioli, and classic tiramisu—right in the heart of Florence!
We begin by making fresh egg pasta dough from scratch. You’ll learn how to knead the dough by hand and shape it into rigatoni using traditional techniques. Then we move on to ravioli, where you’ll prepare a creamy ricotta and spinach filling, roll out the pasta, and carefully fold and seal the ravioli—just like we do in our family kitchens.
While the pasta cooks, we’ll shift to making tiramisu. You’ll learn how to layer espresso-soaked ladyfingers with a rich mascarpone cream, then top it all with a dusting of cocoa powder. We’ll explain the origins of each dish and why they are so special in Italian culinary tradition.
