I recently hosted a three-day South Indian cooking class for guests from Japan, including a restaurant owner. The menu featured a variety of traditional dishes such as potato curry, kadamba sambar, vegetable biryani, aval payasam, laddu, masal vadai, chapathi with dal fry, masala tea, onion raita, carrot-beans poriyal, masala dosa, kuzhipaniyaram, and panagam. The guests thoroughly enjoyed learning to cook these authentic recipes, and appreciated the tips and techniques I shared—especially for restaurant use.
