This isn't a strict cooking class—it's a fun, hands-on cultural playground!
You'll get to shave a block of the "world's hardest food" yourself, a truly unique and satisfying experience.
Then, you become the chef, crafting your own delicious Onigiri rice ball with rich Tamari soy sauce.
We'll have a fun "flavor experiment," customizing your own ultimate Dashi broth.
Finally, we celebrate our creations with a toast of sacred Sake in a real Shinto shrine.
Forget formal cooking classes—this is a fun, hands-on journey in a sacred shrine!
Our main rule is to have fun, not worry about perfection, as you shave a block of real Katsuobushi with a traditional tool.
You'll get to play with authentic ingredients, crafting your own savory "Okaka On-igiri" rice ball with rich Tamari soy sauce.
The highlight is a flavor experiment, starting with pure Kombu broth, then adding your own shavings to create Dashi.
You'll customize its taste with salt, soy sauce, and spices to make it uniquely yours.
We celebrate your creations with a toast of sacred Sake, making for an unforgettable memory.
We'll begin our journey with a warm welcome. You'll get to hold a real block of "Honkarebushi" in your hands to feel its weight and unique, wood-like texture. You’ll be surprised to learn it’s actually fish! Then, we will watch a short, fascinating film (with English subtitles) that shows the incredible six-month process of how fresh bonito fish is transformed into this "world's hardest food." You will learn why this ingredient is so essential to authentic Japanese cuisine.
Now for the most exciting and unique part! I will give you a short lesson on how to use a traditional wooden shaver. But don't worry about being perfect! The real goal is to have fun, relax, and enjoy the satisfying, meditative rhythm of shaving. You will get to shave as much as you like and create your own cloud of incredibly aromatic bonito flakes. This is a rare skill and a true sensory experience you won't forget.
To remember this unique day, we will have a fun photo time! You can put on a traditional "Happi" coat and strike a pose with the shaving tools at our special photo stage. Finally, you won't leave empty-handed. As a special gift, you will receive a Dashi Pack made from your very own shavings and a small packet of artisanal seaweed salt to take home. You can easily relive the taste of today's experience back at your hotel or home.
masanobu
Hello.
I am deeply captivated by the profound charm of **dried bonito flakes (Katsuobushi)**, and I strive every day to share its wonderful qualities with as many people as possible.
The simple yet rich experience of **shaving your own Katsuobushi** and savoring the resulting **dashi** (broth) is, to me, the true essence of Japanese cuisine (Washoku). I would love for everyone to experience this natural, gentle, yet deeply heartwarming flavor.
I also love experiencing different cultures, so I’d like to connect and chat with people from various countries. If we can meet, I would certainly love to enjoy **LanguageExchange** as well!
My home is in **Osaka City**. If we get the chance to talk, I'd be happy to introduce you to the unique and delicious spots the city has to offer, beyond just the magic of dashi!
