    Udon

    Udon (うどん) is a type of thick wheat flour noodle. It is similar to Italian pasta, but much thicker. It has been eaten all over Japan as an easy-to-eat popular meal, and a substitute meal for rice dishes. Udon is often served hot as a noodle soup in its simplest form, as "kake udon", in a mildly flavoured broth called kakejiru, which is made of dashi, soy sauce, and mirin. The flavor of broth and topping vary from region to region.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

In this cooking class, you will learn how to make the dishes we normally eat at home. The seasoning is to my taste. Please try it if you like. The menu includes rolled omelet, and if you like it sweet, add a little more sugar. Grilled salmon, which is salmon fillet grilled until golden brown. Sara udon is crispy noodles topped with stir-fried vegetables and pork and topped with a thick sauce. We use Hinohikari rice from Nara Prefecture. The miso soup has a very delicious dashi stock. After the meal, enjoy a matcha experience.

The reason I decided to start a cooking class was because a Singaporean friend I met 35 years ago would treat me to my home-cooked meals whenever he visited Japan. They always enjoyed them, so I wanted to teach Japanese home cooking to more people from other countries. It also made me want to study English more. The class is about a 20-minute train ride from Mount Yoshino, famous for its cherry blossoms. Shimoichiguchi Station is the nearest station, but I will provide transportation. The rooms were DIYed by my parents at a chopstick factory, and there is a wood-burning stove, creating a relaxing atmosphere. After eating the food you've prepared, you can also experience matcha tea.
My house is a 15-minute train ride from the nearest station to Mount Yoshino, famous for its cherry blossoms.
