Special spring-only experience: Wild vegetable tempura, simmered wild vegetables, and wild vegetable chirashi sushi.

    Tempura

    Tempura (天ぷら) is a classical Portuguese dish brought to and popularized by Japan, consisting of seafood or vegetables that have been battered and deep fried. Tempura is a typical home-style cooking in Japan. It is often referred to as a representative dish to Japan. Although there are various theories, it is said that Tokugawa Ieyasu, the general of the Edo period, liked tempura so much that he allegedly died from eating too much.

Cooking Class Information

First, we gather wild vegetables growing on the property.

We wash them carefully, coat them in tempura batter, and deep-fry them.

If making a simmered dish, we carefully wash the gathered wild vegetables and simmer them in broth.

If making chirashi sushi, we cook rice, make vinegared rice, season the gathered wild vegetables, make a thin omelet, and cut it into thin strips. We also cut the nori seaweed into thin strips. We arrange these colorfully on top of the rice.

We make miso soup and clear soup.

My name is Mika Sugawa.
My family runs a campground surrounded by beautiful Kitayama cedar trees and a clear stream.
We offer pizza-making experiences using a wood-fired oven.

In spring, we can gather many kinds of wild vegetables. Dishes made with these seasonal vegetables have a unique flavor that can only be found in the Japanese mountain village.

We also have a field here that uses the "Kin-chan" farming method, so we can make dishes using fresh vegetables grown without fertilizers or pesticides.

My mother and sister are excellent cooks and can make almost any Japanese dish. You can experience cooking with fresh seasonal vegetables.

I love experiencing different cultures.
