    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

In this Mochi making class, you will learn the cultural significance of mochi and traditions before you start cooking. Then you will learn how to make mochi (rice cakes) using glutinous rice flour. Using the mochi you will learn how to make strawberry (alternatively Pineapple during off-season) Daifuku mochi and Dango (mochi balls on skewers). After you've made, you can take some photos in the special photo setting space, then you are able to taste your creations with green tea or take them with you in a special box.

You can download the recipe from my QR code, therefore you can concentrate your work. My classes are small-group based (max 4 people), allowing for personalized and attentive instruction. This Class starts at 10:30 am or 13:30 pm Mon-Fri.

My Wagashi School's name is "ankotopia", where you can learn not only making Japanese sweets, but also learn about Japanese culture and its role in our tradition. Offering a variety of one-day classes from beginners to advanced students. I try to make my recipes simple as possible, so that you can easily recreate it back home. I've lived abroad over 20 years, and love to entertain people.
