Coconut Crisps
We break open a dried coconut, pry out the flesh, make thin slivers of coconut and then toast in the oven. This makes a fantastic tasty and healthy snack.

Abby's West Indian Curry
Abby taught me how to cook a proper curry. This West Indian Curry is a Guyaneese Madras Curry that complements meats, tofu or beans, as well as veggies.

Buss Up Shut Roti
This soft flaky roti is taken off the tawa and then clapped or beaten to shred the flatbread into flakey layers. This is a Trini version of Paratha Roti, my favorite.

Roasted Pumpkin
Roasting the pumpkin brings out the sweetness of the vegetable that complements the richness of the curry.

Spinach Cooked in Coconut Milk
Coconut milk is used quite a bit in caribbean cooking. This dish is an Ital (vegan) version of Saag Paneer.

Guava Trats
A buttery shortbread crust, with a tart guava paste topped with an oatmeal crumble. A wonderful way to finish a curry dinner.

Cooking Class Information

It is believed that curry came to the Caribbean with the indentured servants after slavery was abolished. The influence of curry on Caribbean cuisine is huge. Each island has their own special blend of spices to make up a wonderful pot of stew. Many debates have been held in kitchens as to which island has the best curry… But everyone agrees that curry and roti is one of those comfort foods that people crave after being off the island for a while.

In our Coordinating Curry class, Nicole explores all the many faces of curry while she creates a meal that fuses a little of the old styles with some newer Western flavors. Visitors will learn about the history of curry, its health value, and shortcuts that can be used to create various curry based meals. The goal will be to make it easy for visitors to go home and cook the same menu whenever they wish.

Hello. My name is Nicole and I run Nicole's Table which offers Caribbean cooking classes to guests from around the world.

I started cooking in my mother's kitchen in Montserrat (a little island in the Caribbean), and then went on to work as a professional chef later in life.

My cooking classes are well structured and always come with a recipe booklet, stories about growing up in the islands, and information about our culture and unique way of seeing the world.
