・Maki Sushi (Sushi Roll)
Traditional Japanese sushi that can be made at home. We will use special utensils that are designed for rolling. The ingredients include cucumber, sauteed carrot, kanpyo, egg custard, and crab stick.
・Chirashi Sushi
Chirashi or "spreaded" sushi is like a mixed ingredient sushi rice. It is another form of sushi that doesn't have a specific shape like Nigiri Sushi or Maki Sushi. In our class, we'll use peas, edamame, denbu (sweet fish flakes), egg flakes, shiitake mushrooms, crab sticks.
・Temari Sushi
Normally, Nigiri sushi (the most famous shaped sushi) cannot be perfectly made besides professional sushi chef, but we substitute Nigiri by making Temari sushi. Temari means historical ball shaped toy in Japan and this sushi is shaped like a cute ball and it is very photogenic. We will use some sashimi to make this sushi.
・California Roll
Almost everybody should know what California Roll is. When we make this sushi, the teacher will explain why this is invented back in state and tell about the history of the sushi, and of course how this is made. The ingredients will include avocado, cucumber, and crab stick.
For this specific course, the teacher will introduce several types of sushi and talk about the history of sushi at the same time.
Sushi is one of the food that changes it's color depending on what ingredients you put in.
Historically, Japanese mainly eat fish rather than meats so pescatarians would be able to eat all the sushis that will be served in this course. (request can be arranged if announced beforehand; we can do vegan, vegetarian, gluten free.)
In Maki Sushi, we will put in the traditional ingredients that normal Japanese home would use.
We will prepare kanpyo, crab sticks, carrots by simmering with soy sauce based broth, make egg custard with a square shaped pan, steam the rice and roll them with nori seaweed.
To make Chirashi sushi, we will use the leftover ingredients from Maki Sushi as well as some new ingredients, such as denbu and shiitake mushrooms. The shiitake mushrooms will need to be soaked in water to moisten.
Temari Sushi are the closest shaped sushi to Nigiri sushi but we will use a saran wrap to make this sushi.
California Roll is worldly renown but is not to be known how to make them so we will explain the method how to make it.
Once all the sushis are assembled, we'll have a moment to taste them and have a relaxed tea time with prepared Japanese cheese cake and tea or coffee.
Once the time is over in class, we will go outside and have a small tour to the marketplace and end our course.
Meeting Point: Matsuyamachi Station Exit 3. Meeting Instructions: Matsuyamachi Station is relatively close to the center of Osaka. From Shinsaibashi Station: Ride on Osaka Metro Nagahori-Tsurumiryokuchi Line (Light Green N Line) and ride 2 stations away to Matsuyamachi station. Make sure to ride the train that goes to “Kadoma-Minami Station” as its destination. The ticket should cost 190 JPY. Go up to exit 3. Meet at Exit 3 of Matsuyamachi Station. If you find “Lawson” convenience store right at your corner, you came out of right exit. Your guide will be holding a sign that says ‘Samurai Cook’.
If you happen to be late with your lesson and the guide will not be there for you: You need to find our cooking class by yourself. The guide will need to take the people who came on time to the cooking class, so you need to walk from the station to our class. Once you arrive to Exit 3, turn around 180 degrees so that Lawson will be on your lefthand. Walk straight and you’ll hit a path with a roof. Walk through the roofed path for 2 blocks and find a roofed shopping arcade on your left. Take a left toward the arcade and once you entered the arcade and find the supermarket Sanko, immediately take a right and get out of the arcade. Go up the hill and you’ll find the apartment building on your right that says “Samurai Cook” on room #1301. We'll start preparing all the ingredients. The host will thoroughly explain fun facts about the ingredients, dishes and historical knowledge about Japanese foods. Let's enjoy our cooking!
You'll have several chances to perform your own cooking once the host teach you thorough instruction. Make your one and only Japanese menu. Be creative and express yourself through cooking!
Now the most fun and tasty part! Let's eat what we made! Not only to learn by hearing what the tradition and history of Japanese foods, but we definitely have to taste it! We'll eat and chat around after we're done with our class, and the host will surprise you with Japanese desserts and green tea, and believe it or not, there is more to it to take home!
Yes! We actually have a beautiful terrace to see through the city of Osaka! From the view, we can easily find the No.1 highest skyscraper in Japan (Abeno-Harukas), and Osaka's most iconic landmark tower (Tsutenkaku). The guests always take pictures from here! Cross your fingers for a sunny day!
My name is Masato Uenishi, Max as my nickname. I lived in state (NY) for 25 years, then moved to Japan and staying here for 14 years.
