- Tagliatelle
Tagliatelle is a traditional type of pasta from the Emilia-Romagna and Marche regions of Italy. Individual pieces of tagliatelle are long, flat ribbons.
Tagliatelle can be served with a variety of sauces, though the classic is a meat sauce or Bolognese sauce.
- Garganelli
Garganelli are a type of egg-based pasta from the Emilia-Romagna region of Italy. They are formed by rolling a flat, square noodle into a cylindrical shape over a ridged wooden board, giving the pasta ridges.
- Tortelloni
Tortelloni are a wonderfull stuffed pasta typically of Bologna, with a shape similar to tortellini, but larger and with a ricotta cheese filling. They are traditionally stuffed with ricotta, Parmesan, leafy herbs or vegetables such as parsley or spinach, egg and nutmeg.
- Ravioli
Ravioli are a type of stuffed pasta comprising a filling enveloped in thin pasta dough. Usually served in broth or with a sauce, they originated as a traditional food in Italian cuisine. Ravioli are commonly square, though other forms are also used, including circular and semi-circular.
Bologna is known worldwide for fresh pasta and in this course you will learn how to make some of the most beloved pastas.
We will start by preparing the dough and then see the different techniques for rolling the pastry using the traditional rolling pin. We will prepare two different doughs.
With the first we will make tagliatelle and garganelli, with the second dough we will increase the difficulty by making two filled pastas: Tortelloni and Ravioli.
Each participant will have his or her own station.
At the end of the course you will taste tortelloni prepared by you paired with wine from our territory.
Each participant has own station and makes both the dough and all the fresh pastries!
