    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

These Japanese comfort food is made vegan just by switching one ingredient in Dashi. Dashi, a broth typically made from dried fish and seaweed is at the heart of Japanese cuisine. In this class, we will make umami-rich vegan dashi from dried shiitake mushrooms and seaweed. You will be finding out how the dashi enhances the flavors of the ingredients in Japanese pilaf, Braised Mizuna, Deep Fried Mochi and Miso Soup, respecively. Vitamins and fiber-rich lotus root sauteed with sesami oil is flavored with salt and Japanese spice mix. Blanched spinach dressed in freshly toasted sesami seed sauce is oil-free and a healthy way to eat more vegetables (because leafy vegetables cook down a lot). Sweet miso is made from only a few ingredients and great with pan-fried eggplant.

・ Hi! My name is Yuko. I have lived in Kyoto my whole life and my house is 3 min from Daitokuji. I love to cook and enjoy meeting people from different countries. I would love to share how to cook Japanese everyday food you can recreate at home with you in a retired Izakaya restaurant owned by my family (and I live just upstairs). I use free range eggs and opt for natural ingredients as much as possible, just like my mom taught me. I look forward to having you in my cooking class! Please also ask for availability for a private food/cultural tour.
