  • Gyoza

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

    Rice

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

In this class, we will hand mix (wearing gloves) ground pork, vegetables and aromatics to make gyoza filling and wrap it with gyoza wrapper. Dashimaki is a juicy, soft omelette flavored with dashi broth and soy sauce. You will learn how to roll it in the rectangle Japanese omelette pan. The salad hand rolls are a fun & easy way to eat more vegetables! Fake crabs and cucumber add nice contrast in texture and flavor. Super easy but tasty skewered dish is great with my favorite Kyoto spice mix. A rice dish is a typical way to finish Izakaya meal. We will make TKG (tamago kake gohan, or raw egg on rice) and miso soup.

2 glasses of Sake/Umeshu (plum wine)/Beer/Soft drink are included.

*Please let me know if you are not sure about having raw eggs in advance so I can have substitute ready. Pregnant women, children or other vulnerable persons should avoid raw eggs.

・ Hi! My name is Yuko. I have lived in Kyoto my whole life and my house is 3 min from Daitokuji. I love to cook and enjoy meeting people from different countries. I would love to share how to cook Japanese everyday food you can recreate at home with you in a retired Izakaya restaurant owned by my family (and I live just upstairs). I use free range eggs and opt for natural ingredients as much as possible, just like my mom taught me. I look forward to having you in my cooking class! Please also ask for availability for a private food/cultural tour.
