The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Cooking Class Information

It was a good and interactive cooking class. Host was great with tracking and taking you through the steps to make different types of mochi. Their house had a wonderful view of cherry blossom trees as well, perfect for the spring season. you have a really good time and learned a lot. An excellent experience all around!

This class was one of the highlights of our trip to Japan. Yuko, our host, was so welcoming and patient as she took us step by step through the art of making wagashi helping us achieve beautiful results. Along the way she taught us about the significance and meaning of the ingredients we used and each type of wagashi that we made. We took both the mochi class and the nerikiri class and had a great time, would definitely recommend it to anyone interesting in learning how to make these wonderful treats.
