    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

One-day classes are for anyone who would like to experience the art of Wagashi-making, (Wagashi is a general term for Japanese Sweets)

The purpose of this class is to familiarize you with Japanese sweets-making and you will have lots of fun making them, even if they are not perfect! You will also get to know the history and culture behind mochi and other traditional sweets.

After the class, you will be able to taste your creations with a cup of tea or a bowl of Matcha tea for the Nerikiri Wagashi class. (You have the option to take home what you have made in a box).

Hi ! My name is Yuko Di Stasio, the leader of Waga・Chic. I hold Japanese confectionery lessons for small groups at my home along the Kanda River in Bunkyo Ward, Tokyo, amongst a lot of greenery.

Post-retirement onwards, I want to make this my future-life's work, and share the wonders of my favourite Japanese sweets with people from other countries. That's why I started Waga・Chic ! My wife and I live in Paris, France. We took a wagashi class in Yuko's house. My wife and I learned all the steps from scratch about how to prepare several wagashis, from raw flour to finished and decorated wagashis. Detailed recipes notes are available on the table to assist in the process and Yuko explains everything in details, and accompanied us through each step. Having no cooking expertise myself, I was surprised to be able to create wagashis that I found delicious. We really enjoyed the experience. If we can find the raw products in Asian shops in Paris as well as a few general cooking equip-meats, we feel confident to be capable of preparing wagashis ourselves. We also met Yuko's husband, originally from Australia, and we had a very interesting conversation about living in Japan as an expatriate married to a Japanese woman. Yuko is very friendly and patient. She communicated with us several times before and after the class by email. We highly recommend Yuko's classes and Yuko and her husband very pleasant personalities. When we come back to Tokyo in a few months, we plan to contact Yuko again.
