    Japanese fried chicken, karaage is made by marinating bite-size pieces of chicken in sake, soy sauce, ginger and garlic before coating them generously with potato starch. When fried, the starch turns into an ultra crispy shell encasing a flavorful juicy bite of chicken. Absolutely great with beer.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

Cooking Class Information

In this class, we will make one of Japanese comfort food called Omurice. Cook ketchup fried rice with chicken, onions, carrots and mushrooms and wrap it in a thin omelette. Karaage is another popular menu everyone loves. We will flavor the chicken with garlic, soy sauce, sesame oil and mochiko (rice flour) batter. This fried chicken is my version of karaage as everyone has their own favorite recipe. Gobo (burdock) is an earthy-flavored root vegetable rich in fiber. You will learn how to prepare gobo and make a simple salad with sesame seeds, soy sauce, and mayo dressing. Finally, we will make Amazake. This traditional sweet drink is made with sakekasu (fermented rice, by-product of producing sake), sugar, grated ginger and water. Sakekasu is full of nutrients such as B vitamins, amino acids and fiber.

You can enjoy your delicious creation in the room or take it to the nearby river or park and have a picnic!

I would love to share how to cook Japanese everyday food you can recreate at home with you in a retired Izakaya restaurant owned by my family (and I live just upstairs). I use free range eggs and opt for natural ingredients as much as possible, just like my mom taught me. I look forward to having you in my cooking class! Yuko was an excellent host, chef and teacher, she was patient and accommodating with our food requests and with our schedule for the day. We got to learn to make many tasty Japanese dishes. Her kitchen was very well-equipped for preparing food and cooking. Yuko was also fun to talk to, we shared and learned about our respective ways of living and experiences with food. When the weather turned rainy she was gracious to allow us to stay on at her place to enjoy the results of our cooking, and suggested nice places nearby for a walk after the rain passed.
