①『Ukishima』adorned with cactus-shaped sweet bean paste
A type of Japanese confection made by mixing in an (sweet red bean paste) and steaming it. The name “Ukishima” refers to its resemblance to floating islands when it puffs up during steaming. It has a moist and tender texture without the use of oil.

※ we will make a total of 2pieces:
・1 eat-it-now (for classrooms)
・1 pieces for takeout (to-go)

② Gettou herbtea
Gettou is a herb native to Okinawa, belonging to the ginger family, Zingiberaceae. It has been cherished since the Ryukyu Kingdom era. In Okinawa, Gettou is referred to as "Sannin" and its leaves, seeds, and flowers have been used as medicinal herbs since ancient times. Gettou contains higher levels of polyphenols compared to red wine, giving it strong antioxidant properties that help neutralize harmful substances like free radicals, contributing to overall health. Additionally, it provides moisturizing and astringent effects, making it beneficial for maintaining healthy and youthful skin. Gettou is also rich in calcium, vitamins, magnesium, iron, and other minerals.

①『浮島』に餡のサボテン
餡を混ぜ込んで蒸しあげた和菓子で、蒸して膨らんだ様子が浮島に似ていることから『浮島』と名付けられました。油を使わず、水分を多く含んだしっとりとした食感です。餡のサボテンでデコレーションします。

②月桃ハーブティー
月桃は、ショウガ科の沖縄原産のハーブで、琉球王国時代から大切にされてきました。沖縄では月桃を「サンニン」と呼び、葉や種、花は古くから薬草として使われてきました。ポリフェノールが多く含まれており、強力な抗酸化作用や、フリーラジカルなどの有害物質を中和します。さらに、保湿効果があり、健康で若々しい肌を保つのに役立ちます。カルシウム、ビタミン、マグネシウム、鉄分などのミネラルも豊富です。

※こちらのコースは14:30-17:00のみです。午前中は伝統料理のコースのみ。

Cooking Class Information

Let’s make Ukishima together!

1.Separate the eggs into yolks and whites, then gently fold in strained sweet bean paste (koshi-an).
2.Whisk the egg whites until stiff peaks form, then combine with the yolk mixture. Divide into cups and steam in a steamer.
3.While steaming, let’s create cactus-shaped decorations from sweet bean paste.
4.Decorate the Ukishima with the cactus-shaped sweet bean paste.
5.Serve the traditional Ukishima adorned with cactus-shaped an and pair it with Okinawan gettou herbal tea in Yachimun, pottery from Yomitan Village. Refresh your mind and body with a taste of Okinawa.

※This course is available only from 2:30 pm to 5:00 pm. The morning session is for the traditional cuisine course only.

一緒に『浮島』を作りましょう!

①卵を卵黄と卵白に分け、こし餡を加えて切るように混ぜる。
②卵白を角が立つまで泡立て、①に加えてカップに分け、蒸し器で蒸す。
③蒸している間に、餡のサボテンを作りましょう。
④浮島に餡子のサボテンを飾りましょう。
⑤餡のサボテンをあしらった伝統的な和菓子『浮島』と沖縄の月桃ハーブティーを読谷村産の陶器『やちむん』に盛り付けして味わいます。心も体も沖縄を感じてリフレッシュしましょう。
