Cooking Class Menu

Here’s the translation:

- **Miso Soup** お味噌汁
I make miso soup for my family every morning. I pay close attention to both the miso and the dashi. However, I will teach you how to make a simple and easy miso soup.

- **Spring Rolls** (fried)春巻き
This is one of my specialty dishes. While traditional fillings for spring rolls are great, I can also teach you how to make variations using ingredients like lotus root, cheese, shrimp and cheese, vegetarian spring rolls with soy meat, and spring rolls with pork and eggplant. They pair perfectly with both beer and rice!

- **Kombu-Zuke Fish** 刺身の昆布締め
Using fresh fish like sea bream, horse mackerel, and sardines, I will show you how to prepare them using the Japanese technique of kombu-zuke. It’s very easy and enhances the flavor of the fish. You can enjoy it in a Japanese-style carpaccio.

- **Teriyaki Chicken** 照り焼きチキン
This recipe is very popular among both children and adults.
Here’s a description of "Shiraae" in English:

**Shiraae** 白和え
Shiraae is a traditional Japanese dish made by mixing blanched vegetables or fruits with a creamy dressing made from silken tofu.sesami paste and miso. The basic ingredients typically include seasonal vegetables such as spinach, carrots, and daikon radish, but you can also use fruits like apples or pears for a unique twist. The tofu and miso dressing creates a rich and flavorful base that beautifully complements the freshness of the vegetables or fruits. Shiraae is not only delicious but also nutritious, making it a wonderful addition to any meal. It's often served as a side dish and can be enjoyed chilled or at room temperature.

Here’s a description of "Takoyaki" in English:

**Takoyaki** たこ焼き
Takoyaki is a popular Japanese street food dish made of battered octopus balls. The batter is made from a blend of flour, dashi (a Japanese soup stock), and sometimes eggs, creating a light and fluffy texture.
This savory snack is loved for its rich flavors and delightful texture, making it a must-try when visiting Japan or exploring Japanese cuisine!
※We will make takoyaki on the balcony using a special iron plate takoyaki maker. My brother is a professional takoyaki maker, so we will make it by special reservation.
Here’s a description of "Chirashi Sushi" in English:

**Chirashi Sushi** ちらし寿司
Chirashi sushi, also known as "chirashi-zushi," is a vibrant and colorful Japanese rice dish that features a bed of sushi rice topped with a variety of fresh ingredients. The term "chirashi" means "scattered," which reflects the way the toppings are artistically arranged over the rice.

The base of chirashi sushi is typically made from vinegared rice seasoned with rice vinegar, sugar, and salt. The toppings can vary widely and often include slices of raw fish such as tuna, salmon, and yellowtail, as well as cooked seafood, vegetables, and garnishes like pickled ginger, sesame seeds, and nori (seaweed).

I make my children's bento every morning. Please enjoy the bento, which is a part of Japanese culture!
I will also share some stylish bento containers that you can buy in Japan.

Hello everyone! I'm YUUMI.

I've been an international flight attendant for 18 years, and now I'm a mother to an 8-year-old daughter and a 5-year-old son.

Having tasted cuisines from around the world, I've grown to truly appreciate the deliciousness and health benefits of Japanese home-cooked meals. That's why I want to share easy and tasty recipes with visitors to Japan. I believe that cooking together and sharing stories can bring joy and happiness, which is why I joined Air Kitchen.

Recently, I also became a certified cheese sommelier and a food education instructor. I love cooking and often invite friends over. I try to use organic vegetables, meat, rice, and additive-free seasonings whenever I can, and I’d love to share that with you!

My home is conveniently located in the Shibuya and Daikanyama areas, just a short walk from popular sightseeing spots. We also have a balcony, so on sunny days, we can enjoy meals outside!

Right in front of our home are hotels popular with foreign guests, so you can have a great time exploring Tokyo.

I can't wait to cook and chat with all of you. Let’s create wonderful memories together! (^^)

We had a wonderful experience with Yuumi and her family. Everything was perfect: we learned how to cook different traditional japanese recipes, we had a wonderful time chatting about Japanese traditions and the kids played altogether and tried to communicate.
