Soy Sauce Ramen:
A ramen that everyone loves, with Chinese noodles in a clear soup seasoned with soy sauce, topped with chicken roll slices, bean sprouts, bamboo shoots and green onions. Originally, it is topped with pork char siu, but chicken is used to make it easier to make all over the world.
Gyoza:
One of the most popular dishes. Minced pork, chicken, seafood and vegetables are wrapped in a flour skin and baked until crispy. Recommended with beer. We will teach you how to wrap it well and the secret to baking it until it is crispy.
Onigiri:
Delicious Japanese rice: Rice cooked in a hagama (a traditional Japanese gas-fired rice cooker), with grilled salmon or pickled plums, made into a ball, and wrapped in crispy seaweed. We will teach you carefully so that you can make onigiri, a popular dish all over the world, by yourself.

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

Shoyu Ramen
I will teach you how to bring out the flavor of soy sauce ramen soup and how to make chicken rolls easily. Although pork char siu is a popular topping, I will use chicken, which is easy to buy all over the world.
Gyoza
I will teach you how to bake a crispy skin that goes perfectly with gyoza beer and how to wrap the filling nicely in a thin skin. Choose a skin made from wheat flour or gluten-free rice flour.
Onigiri
I will teach you how to make delicious onigiri using freshly cooked rice, not the cold, hard kind you buy at a store. Once you learn how to make it, you can take onigiri lunch to work or school. This will eliminate the need to eat expensive lunches.

My name is Midori of Midori'sKyotoKitchen, I have been studying Southeast Asian cuisine for 40 years and running an Asian cooking school for 30 years, and since 2016 I have been teaching classes in Kyoto City to guests from all over the world so they can make delicious Japanese food at home. I have been teaching Halal, Kosher, Vegetarian, Vegan, and Allergy Friendly Cooking classes to a wide variety of guests ranging in age from 0 to 99 years old. Classes are baby and wheelchair accessible.
