Chirashi Sushi
We make sushi rice in a traditional wooden bowl and mix it with seasoned ingredients.
Then, we prepare colorful toppings:
– Cook a thin omelet and cut it into fine strips.
– Cut carrots into flower shapes and boil them.
– Boil green beans and slice them.
Finally, we decorate beautifully with pickled ginger, sakura denbu (sweet pink fish flakes), and shredded seaweed.

Miso Soup
We make miso soup from scratch using katsuobushi (bonito) broth and seasonal ingredients from Hokkaido.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Chirashi Sushi
We start by mixing freshly cooked rice with seasoned ingredients that are prepared in advance.
Each guest makes their own thin omelet, cuts it into fine strips, and uses it as a colorful topping.
Next, we cut carrots into flower shapes and boil them, cook green beans, and slice seaweed thinly.
Finally, we decorate the sushi beautifully with colorful ingredients such as egg, vegetables, and seaweed.

Miso Soup
We make dashi (broth) from scratch by boiling water and adding plenty of bonito flakes.
Then we cut and cook seasonal vegetables from Hokkaido, add miso, and finish a warm homemade miso soup.

I will pick you up by car at Shin-Sapporo Station. It takes about 10 minutes to my home. Let’s start by relaxing with a welcome drink in a cozy Japanese room.

Beat the eggs well and cook thin egg sheets in a frying pan. After they cool down, cut them into fine strips to use as colorful toppings for the chirashi sushi.

Use a small vegetable cutter to make cute flower-shaped carrots. After boiling, they become even more colorful and bright — perfect for decorating your chirashi sushi!

Mix the Ingredients with Sushi Rice

We mix colorful vegetables and other ingredients with the sushi rice in a traditional wooden bowl called sushi oke. The fragrance of vinegar rice spreads gently — this is the base of delicious chirashi sushi.

Now it’s time to decorate! We beautifully arrange the colorful ingredients such as thin omelet strips, vegetables, and pickles on top of the sushi rice. Each guest can enjoy creating their own unique design.
