    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Thank you for visiting my page. I'm a certified cooking instructor with the Japan Association of cooking for Foreigners.

I was born and raised in Kawasaki city、Kanagawa Pref. and moved to Nagoya 10 years ago. My father often invited his friends and relatives for dinner at my house. As a child, I enjoyed watching my mother prepare lots of delicious Japanese dishes for home parties, and I really loved the lively feeling of sharing the food with everyone.
Because of these experiences, after moving to California, I often cooked Japanese dishes for my friends. It brought me joy to see them enjoying Japanese cuisine regardless of their nationality or background.
