Cooking Class Menu

Traditional Japanese cooking often relies on animal-based dashi stock made from bonito fish.

Kasaneni(重ね煮), which you'll learn in this class is different — the vegetables themselves create the depth of flavor.
No animal-based stock needed.

Experience this Japanese vegetable cooking technique - a layered vegetable cooking method rooted in Yin-Yang balance.

    Miso Soup

Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

I will welcome you at JR Kusatsu Station and we'll drive to my home shortly.

At home, our golden retriever, Sun, will welcome you!
You will learn about the Yin-Yang principles behind a Japanese layered cooking technique called kasaneni.

We are going to make miso soup with fresh seasonal vegetables and tofu steak with vegetable sauce, kasaneni-style.

Enjoy a vegan tasting and relax with our host dog, Sun. After we finish, I'll drive you back to the station.
