It means "layered cooking" — a Japanese technique where vegetables are layered in a specific order, steamed with a little water, drawing out their natural sweetness and vitality.
Traditional Japanese cooking often relies on animal-based dashi stock made from bonito(fish).
Kasaneni is different — the vegetables themselves create the depth of flavor. No animal-based stock needed. Just layers, heat, and the natural power of seasonal produce.
It follows Yin-Yang principles — balancing the energy of each ingredient to create harmony on your plate and in your body.
In this class, we'll make:
*Miso soup with kasaneni vegetable base — rich in flavour, 100% plant-based
*Tofu steak with kasaneni ankake sauce — a umami-packed glaze made entirely from layered vegetables
Once you understand the principle, you can recreate these dishes anywhere in the world with whatever is local and in season.
