Cooking Class Menu

Hands-on cooking classes will be held at our Japanese cuisine restaurant "TOKITARAZU" in Ebisu, which is an upscale residential area in Tokyo.
You can learn from the basics of cooking to professional Kaiseki cuisine (traditional Japanese cuisine). Also, you will enjoy Sake paired with dishes.
Our instructor, who has a mastery of Kaiseki cuisine, will guide you step by step in making the dishes and decorating plates. For your more intersts, the instructor shows you more tips in Japanese cooking.

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

Cooking Class Information

Specifically what you will learn is how to make Dashi (soup stock), how to make Sumeshi (sushi rice), how to use cooking utensils and how to prepare ingredients.

In this class, the instructor starts from how to make Dashi (soup stock) with seeweeds and bonito flakes. With this beautiful soup stock, I, Yuko will show you sometimes how to make miso soup explaining the differences between various kinds of Miso, while you can enjoy Miso tasting, and sometimes how to make Dashi flavored Japanese rolled omlet. The menus are subject to change due to season and ingredients' availability. For example, I often let you make Chirashi-Sushi, which is a typical dish for Spring festival in Spring, showing how to prepare Sushi rice, and how to decorate it topped with pink salmon, red tuna, green leaves and yellow omlet. For the advanced, I may show you how to make Sakura-mochi, another typical dish, a sweet with a pickled cheery-blossom leave for Spring festival.
