    Karaage

    Japanese fried chicken, karaage is made by marinating bite-size pieces of chicken in sake, soy sauce, ginger and garlic before coating them generously with potato starch. When fried, the starch turns into an ultra crispy shell encasing a flavorful juicy bite of chicken. Absolutely great with beer.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

In this class, we will cook and enjoy a Japanese Fermentation Gozen, a traditional Japanese meal centered around fermented seasonings.

You can choose one main dish:

• Japanese Karaage (fried chicken)
• Kuruma-fu Karaage (fried wheat gluten)
• Koya-dofu Karaage (fried freeze-dried tofu)

Served with:

• Fresh seasonal salad with homemade fermented dressing
• Seasonal fermented side dishes made with simple ingredients
• Miso soup made with homemade miso
• Organic Japanese tea (Green tea, Bancha, or Hojicha)

Many of the fermented seasonings used in this class are homemade, including miso and other traditional Japanese fermented ingredients. Fermented foods are rich in natural probiotics and are known to support gut health.

My kitchen motto is “Food and medicine come from the same source.”
We use organic rice and homemade fermented seasonings, and the food is designed to make your body feel warm, light, and nourished.

We will enjoy the meal in a traditional Japanese-style room overlooking our terraced rice fields.

KONNICHIWA! Hello, my name is Tomomi. Please call me Tommi.

Welcome to my mountain retreat farm in Shirakawaguchi, a peaceful countryside village on the way to Takayama from Nagoya or Gifu by express train. Surrounded by beautiful nature, you can hear birds singing and the gentle sound of the river.

I love cooking and fermentation. I am a certified fermentation sommelier, and I make many traditional Japanese fermented foods such as miso and soy sauce from scratch using soybeans and wheat grown in our own field.

Fermented foods are an important part of Japanese food culture. They are also rich in probiotics and are known to support gut health. In my cooking classes, I introduce simple and delicious Japanese home cooking using these homemade fermented ingredients.

Many of the fermented seasonings we use in the class are homemade and slowly aged over time.

Vegan options are also available if you prefer plant-based meals.

You will experience authentic Japanese home cooking and fermentation culture in a quiet countryside setting.

I live here with my cat and dog, and I look forward to cooking together and sharing a wonderful time with you.

After the class, you will receive a recipe so you can recreate the dishes at home.
