    Green Tea

The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

Wagashi Issho is a classroom conveniently located in central Kyoto that introduces participants to traditional Japanese confectionery.
Sweets have been part of life in Japan for thousands of years.
They appear as offerings at festivals and religious ceremonies, are served at traditional tea gatherings and are, of course, enjoyed as everyday snacks.
At Wagashi Issho, you can learn to make these popular treats as well as the delicate confections of chado – the Way of Tea – which has shaped the development of Japanese confectionery.

We thoroughly enjoyed the workshop making the beautiful wagashi/nerikiri with Sensei Yasue. She was a lovely calm demeanor and her explanation of not just the art of making the exquisite piece but also the background and the history of the art making. She has excellent English and was very encouraging. Our children enjoyed the workshop as well. We highly recommend this if you are in Kyoto. We have attended other craft/food workshop in the past, and this is our favourite one.

Thank you for your patience and easy to follow instructions. You said you couldn't speak English but you spoke very well. The okashi you chose to teach are not easy, but they included steps that are helpful to know for many applications, so it was a great learning experience. We all had fun because of your warm welcome and very organized method of teaching. It's obvious that you have a lot of experience and expertise. I will definitely come back for more on my next visit. A nice entry into the art of sweets making. Looking at those desserts it is not apparent how much skill is required to craft them. Thank you for giving us an insight and teaching us. Considering the lenght of one hour enough depth and knowledge was provided. So be aware you will not have time to perform everything from scratch and the training focuses on mainly on the creation and shaping of the sweets.
