    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

・Ball-shaped Sushi
You might think it would be difficult.
But please don’t worry!!
Very easy, cute and beautiful to make it. You will just put Sashimis, vegetables on rice using plastic wrap. Let’s enjoy to arrange to suit your taste with the various ingredients like lotus roots shaped in flower, thin omelettes, and avocados etc.!

・Miso soup
At first, we make broth (in Japanese, Dashi) using kelps and shavings of dried bonito.
(It’s you to shave the dried bonito!!)
Thanks to Dashi, we can cut down on seasonings and make a delicious soup, even though it’s low sodium.

・Miso Dengaku (Baked vegetables with sweet miso paste)
We use boiled radish and konjak and put hand-made sweet miso paste on them.
This kind of dishes used root vegetables that are very popular in japanese winter so that the root vegetables are effective to make our body warm up.
Regarding miso paste, this is a good match with fresh vegetables, too. And also its storage period is long. You can learn how to make this convenient paste that you can use it for various dishes!!

・Dessert in Matcha
This is a simple dessert using Matcha( powdered green tea), quite popular in foreign countries.
At first, we make ganache mixing Tofu and chocolate and then coat it with Matcha.
Please look forward to tasting this bittersweet and healthy dessert!
