We will prepare two different Belgian chocolates from scratch : Pralines filled with ganache and mendiants (disc of chocolate with dry fruits and nuts on the top of it). While your chocolates are resting in the fridge we will prepare and drink a delicious homemade hot chocolate. Finally you will get a lovely box to take your amazing creations home !
The workshop starts with a short introduction and explanations about chocolate. Each step is illustrated by a demonstration.
Firstly you will be divided in teams (3 people per machine) and start by tempering the chocolate.
Once your chocolate is tempered you will create the shells of your pralines.
Since it has to cool down, it will rest in the fridge.
In the meantime we will prepare pralines's filling (ganache) and mendiants.
Next and last step will be to fill your pralines with the ganache. Then it has to rest for 15 minutes to get hard.
You will be prepared and served a delicious homemade hot chocolate.
Finally you will unmold your pralines and be given back your mendiant : poor all your wonderful creations into your box.
Hey! I'm Titch, I was born in Belgium and I travel giving cooking classes (mainly chocolate and waffles!). I have been making delicious waffles for many years until I decided it was time to move on the Belgian food chain and I started learning about chocolates! After many years of practice, I am happy to host this technical - yet accessible to anyone 12+ years old - praline and mendiants chocolate making class.
I have had the chance to travel to many countries, especially Peru to learn more on the reality of the cocoa production and the whole chain from the plant to our workshop in Brussels, I am proud to use only the best fair trade chocolate, come share the joy!
