Queijinho do céu
It´s a specialty from a city called Évora. Has the name of a cheese (queijinho=cheese) but it´s not a cheese! It´s a dough of almond filled with egg cream. It´s heavenly.
This recipe is part of a set of recipes called Portuguese Conventual Pastry created in the 16th century by the nuns in the kitchens of the convents from north to south of Portugal.
These specialties that each convent knew how to make unique passed from generation to generation continue today to blend with the same fairness of hands that Dominicans, Franciscans and Carmelites nuns made until the 19th century. The Portuguese call it “Ovos Moles” (soft eggs) a tribute to the egg, the base ingredient of the Conventual Pastry.

We will be cooking together simultaneous in our own kitchens, me in Lisbon, and you? It´s simple, fun, and tasty. You just need a computer or a mobile phone and internet. The Class takes 1.30/2.00H, it depends on the rhythm of the kitchens!
During this time you will learn to cook the Queijinho do Céu recipe from the scratch, cream and dough, and also the History behind the pastry. You know, that this recipe was created inside a monastery?
Format
The Online Workshop can be enjoyed anywhere in the world, by one or more people simultaneously, in the company of the family or individually.
It´s taught directly from our kitchen (Casa dos Ovos Moles) for other kitchens. In each of the kitchens, participants prepare the recipe step by step following our example and directions. The workshop ends when all the kitchens have finished preparing the recipe, when all the cakes are out of the oven.
The transmission of the workshop is done via Zoom (a video conference app-free), and for that purpose all participants have to download the application to their computer or mobile phone.
Duration and Participants
1.30/2H, it depends the rhythm of the kitchens.
The workshop is taught for up to 5 kitchens simultaneously. We do not impose a limit on the number of participants per kitchen. You can invite family and friends to your kitchen!
Minimum participants to activate the workshop - 2 kitchens.

Cooking ingredients for the class
Eggs, sugar, ground almond (without peal), water, lemon zest; pot; bowls, flour, spatula or wood spoon, manual cake wisk or wood spoon.

With the booking you receive all information about ingredients, utensils, recipe, procedures and rules, and zoom invite link, so at the time you will be ready!

I am a co-founder of the Casa dos Ovos Moles, it´s a pastry shop specialized in the century-old Portuguese Pastry popularly known as "Ovos Moles" and famous for its recipes: pastel de nata, ovos moles de aveiro, fios de ovos, pão de ló, travesseiro de sintra, trouxas de ovos, pastel de tentugal, dozens of divine recipes. We launch the Pastry Workshop in 2018, furthering our goal to spread our culture, and now in response to the context we are living we launch the ONLINE Pastry Workshops - If we cannot come to us, we come to you!
The Casa dos Ovos Moles em Lisboa materializes the desire to build a project linked to Portugal, we wanted to cultivate Portuguese traditions. We identified the opportunity to develop a regional market (highly regionalized) that is our sweet glory - the Portuguese Conventual Pastry. We came up with the idea to bring the loved centuries-old delights from all over the country to Lisbon, creating a show case of Portuguese Conventual Pastry. We travel all over Portugal looking for the finest recipes and producers with a mission “ to put in the mouth of the world the best of Conventual Pastry”.
