- Fresh filled pasta (Italian Ravioli)
Ravioli are a type of pasta with a filling inside that is usually cheese, vegetables or meat. Usually served with a sauce, they originated as a traditional food in Italian cuisine.

Ingredients (2 servings)
190 g 00 flour (1 1/2 cups) plus extra flour, if needed
2 medium eggs

for the dough
pasta board (you can work on a counter top as an alternative)
plastic wrap
for ravioli:
rolling pin or pasta machine
pastry cutter or knife
small bowl
tray dusted with flour

Place the flour on a pasta board (or on a counter top or table) and create
a well in the center. Crack the eggs into it, add a pinch of salt and, using a
fork, beat the eggs. Mix flour and eggs: if the dough is too dry add some
water or add flour if it’s too sticky.Knead until smooth and silky. Wrap the
dough in plastic wrap or cover with a bowl; set aside for about 30
minutes at room temperature. Cut the pasta dough into four equal parts.
Working one section at a time, roll the dough through all the settings on
the machine, from the widest to the narrowest setting. Lay each sheet of
pasta on a floured counter and cover with plastic wrap to prevent from
drying. If using a rolling pin, roll the dough very thin and cut in strips 8 cm -
3” large
Put one teaspoon of the filling about every 3 - 4 cm - 1,5” along
center of the strips of dough. Wet the edges of the dough and between
each mound of filling with water or egg wash. Fold the strip in half over the
filling to the opposite edge and press to seal eliminating any excess air.
Cut the ravioli with a pastry cutter or knife. Place the ravioli on a tray.

Ravioli ricotta and vegetables

ingredients (2 servings)
200 g fresh pasta dough (see Fresh Pasta recipe)
150 g - 1 cups ricotta, drained if wet
250 g - 9 oz seasonal vegetable (bell pepper, spinach, zucchini etc)
1 clove garlic, crushed and peeled
1 tablespoon grated parmesan cheese
salt and pepper
1 tablespoon extra virgin olive oil
potato ricer (optional)
wooden spoon

Cut vegetable in small pieces. Pour extra virgin olive oil in a large skillet,
add garlic and sauté until lightly golden; add vegetable, a pinch of salt and
sauté until cooked. Remove garlic. In a large bowl, mix ricotta, cooked
vegetable, Parmesan, salt and pepper to taste. Set aside.

Tomato sauce
Ingredients (2 servings)
200 g - 1 cup tomatoes, chopped
2 cloves garlic, crushed
8 basil leaves, in pieces
salt and pepper
1 teaspoon extra virgin olive oil
wooden spoon

Pour oil in a large skillet, add garlic cloves, 4 basil leaves and sauté for one
minute. Add tomatoes and 1 pinch of salt. Cook for about 30 minutes,
until sauce is reduced. Salt and pepper to taste, add the remaining basil
leaves and stir. Remove garlic cloves before adding to the pasta.
