Jerk cooking is an authentic Jamaican way to season and cook meat. The seasoning is made up of local/regional spices like scallions, onion, thyme, pimento (allspice), cinnamon, nutmeg, and Scotch Bonnet peppers.
In this class, Nicole will introduce visitors to all the jerk spices, you will make the jerk seasoning and discuss the various ways jerk seasoning can be used. You will also make the side dishes to have an authentic 3 course Caribbean Meal.
Hello. My name is Nicole and I run Nicole's Table which offers Caribbean cooking classes to guests from around the world.
I started cooking in my mother's kitchen in Montserrat (a little island in the Caribbean), and then went on to work as a professional chef later in life.
My cooking classes are well structured and always come with a recipe booklet, stories about growing up in the islands, and information about our culture and unique way of seeing the world.
